Owner Mary Jane and her team create a rotating seasonal menu, using local ingredients that are sustainable and organic whenever possible. Nothing exemplifies these ideas more than “For The Love of Curry” pizza, which begins with homemade crème Fraiche, is topped with local roasted cauliflower, shredded New York cheddar cheese and drizzled with local Curry Karma Sauce®. The magic happens in the 6000lb Le Panyol oven, which resides outside, where diners can see their pizza being cooked at 800 degrees. Even the firewood used to heat The Copper Oven is local!

Hazelnut kitchen was established in Trumansburg, NY, April 2007. The restaurant is proud to support the region by using local ingredients to create a farm to table destination restaurant in the Finger Lakes. This wouldn’t be possible without a sustaining community and local enthusiasm. One of the fall entrée selections was pork loin with charred root vegetables, fennel salad, “scalloped” corn, parmesan, and husk cherries. Thanks to Autumn Harvest, Blue Heron, Silver Queen, and Daring Drake farmers for making the item uniquely delicious.
