Chef Craig Wilson

Chef Craig Wilson has been in the restaurant business for more than twenty years starting from a Country Club dishboy in Philadelphia and working his way through to his current position as chef/owner of the Union Block Italian Bistro in Hammondsport, NY. Along the way he traveled and lived in Barcelona, Spain, rode his bike across much of Europe, and settled in Thailand to learn the cuisine firsthand. In recent years he has owned and operated restaurants in NYC and here in upstate NY. He has a great passion for impromptu and creative, fresh cooking.

At Union Block Italian we are creating a warm family environment, both behind the scenes and out front for you our guests. By creating seasonal, home-style dishes we support our local farmers and wineries as much as possible while providing you with a unique dining experience.
