Chef Paul Midgley’s philosophy is simple. Eat locally, eat seasonally. Chef Paul feels that the Finger Lakes and Central New York have vastly untapped resources in regards to amazing produce, meats, cheeses and other artisan products. This philosophy is the driving force behind Paul’s soon to be opening gastropub in Manlius. Focusing on local and seasonal ingredients and stripping away all pretense, Chef Paul will be offering playful and refined comfort foods in a relaxed and casual atmosphere.
Chef Paul is also the consulting chef for Bare Bones Health and Wellness, also located in Manlius. Paul’s belief that we can heal and feel better through better food choices help to motivate this. Paul has a large client base with special needs, and his extensive knowledge of gluten free, dairy free, vegetarian, vegan and raw diets is especially helpful to the Bare Bones clients as well.
