Chef Tim Knowles
Chef Tim has always had an interest in cooking and food. Even as kids, “they made meals for their family”. When asked why his interest developed beyond that, Tim’s response was “I feel like it’s my Dharma .. It’s what I’m put on earth to do.” That said, Tim has had an in-depth background in Food and Beverage.
Chef Tim worked in “little restaurants” to start and then he decided to elevate his skills and attended the Culinary Institute of American at Hyde Park. He graduated from there in 1990 and his calling took him all over the United States and Eurpose to cook.
Chef Tim loves to make pasta and recognizes that the rich Italian culture, in particular, Milan, has influenced his development. His favorite is cheese pasta – but he has also successfully made chocolate pasta for dessert and is currently working on the development of an apple pasta – to take advantage of the fact that “in this area, the Finger Lakes … we have the greatest apples in the world.”
Chef loves all music, “well, except country music.” Among his favorite artists are the Beatles – in fact his son is named Jacob Harrison. Tim is a bicycle racing fan and when he gets to vacation he prefers “the middle of Seneca or Keuka Lake” for a nice relaxing getaway.
